I think it is epically cool that brewers are using wild yeast strains to brew like our brewing foreparents in Belgium. A little yucky, but really very cool. I may have to try this by collecting yeast from our roof. And then I will make beer with it and I WILL NOT TELL YOU. Or I will, but only after you've tried it.
